• Amuse-Bouche: Chickpea croquette with mint pesto and lait fermente mousse
• Trilogie vert (Alla Sarmi): Served with basmati rice, Moroccan pickled lemons, kale chips
• Un moment de calme: Hummus mousse with pine nuts, sauteed beef, mutabbaq (stuffed roasted peppers and tabbouleh dip), and muhammara with almonds (roasted eggplant with yogurt)
